Cooking time: 55 minutes
Difficulty: Easy

Featured Product

Thinly sliced halal dried or smoked beef

Ingredients

  • 800 g halal-certified boneless chicken thighs
  • 80 g dried beef, cut into strips
  • 500 g new potatoes and 150 g peas
  • 1 large onion and 3 garlic cloves
  • 400 g chopped tomatoes
  • 2 tablespoons drained capers
  • 150 ml clear apple juice
  • 200 ml halal chicken stock
  • 3 tablespoons olive oil, parsley, salt, and pepper

Preparation

  1. Season the chicken lightly with salt and pepper. Sear it in olive oil, skin-side down if the skin is on, until golden brown. Remove from the pan.
  2. Using the same fat, soften the onion. Add the strips of dried beef and cook for only 1–2 minutes until fragrant.
  3. Add the tomatoes, apple juice, chicken stock, and capers. Return the chicken to the pan, cover, and simmer gently for 25 minutes.
  4. Stir in the halved new potatoes and continue cooking for about 20 minutes. Add the peas during the final 7 minutes of cooking.
  5. Finish with garlic and parsley. Taste before adding salt, as the capers and dried beef are already salty.

Tip

If you prefer less sweetness, replace half of the apple juice with additional chicken stock and add one teaspoon of lemon juice.
